Why prepare a no bake eggless cheesecake recipe?

I ended my 2017 with a massive no bake egg-less cheesecake recipe because I wanted it to be festive. How did you end yours and why?

Towards the end of 2017, it was time to count the blessings I’ve been granted with over the past year. This included escaping from a toxic work environment, starting fresh in addition to meeting new interesting people. I made a lot of decisions last year. One of them as you may know was to re-brand my Instagram account in addition to… re-brand it again! I honestly think that 2018 is my lucky year and that 3rd time’s the charm with naturally cooking.

 Now that being said, I wanted to share a very special Thank you for Sally, owner of Sally’s Baking Addiction

because although she might never see this line, she’s the reason behind me wanting to create a food blog in the first place. Her recipes are just too colorful and inspiring and I am amazed every day by her simple and mouthwatering creations.

And THAT being said ( I talk too much lol) I’m writing today because i felt like sharing a mouthwatering recipe that I crossed on the Martha Stewart Website 

So because I have been craving Cheesecake for so long and aside of making my

PESTO PASTA WITH BACON

I was super excited to try out a recipe that’s easy and fun to make. So I came across Martha Stewart’s website and was inspired to prepare one of the BEST CHEESECAKES I EVER HAD!!

Instructions
To prepare the crust
  1. Place biscuits in a zipper back. Using a rolling pin, crush them completely until you get a crumbly consistency. Transfer to a mixing bowl.

  2. Add Sugar. Melt the butter in a small saucepan then take it off the heat to cool a little bit. Add it to the biscuits and sugar mixture. Mix ingredients until you get a crumbly dough consistency.

  3. Press the mixture well in a 22 cm baking tin. refrigerate for 10-15 minutes and meanwhile prepare the filling.

To prepare the filling
  1. In a mixing bowl, use an electric mixer and beat the macarpone cheese until soft. Beat in the whipping cream a little at the time.
  2. Add vanilla and lemon juice. keep beating until mixture is stiffed and well combined.
  3. Pour the filling mixture over the crust and spread it evenly. Cover the whole in plastic wrap and refrigerate overnight.
  4. Decorate with mixed fruits and serve. I hope you love it as much as I do!
Recipe Notes

You might feel like the filling is a bit runny at first. If you're in a hurry you can pop the baking tin in the freezer for a couple of hours then transfer it to the refrigerator for an extra 2-3 hours. Bon appetit!
